Spanish Cooking 101 - Tortilla de Patata


This is one of my most favorite Spanish dishes.  It's very common and you can get it at almost any place for lunch or tapas.  You can eat it plain or inside of a sandwich.  It's made of onions, eggs and potatoes.  Simplicity at its finest. 

First you saute an onion and 4-5 potatoes, diced in vegetable oil for about 20 minutes, stirring occasionally.  When the potatoes are soft drain off liquid and set potatoes aside for a moment.



Whip about 4-5 eggs....really, really, really, really, really good.  Put the potatoes back into the frying pan and add eggs.  Cook about 10-15 minutes until golden brown & flip for an additional 10+/- minutes on the other side.  Now, enjoy!!
